Black Pepper is an extra-ordinary spice which has immense nutritional benefits
which all of us are aware of. Already I am an avid user of pepper, but what I recently read
about pepper persuades me to use even more. Pepper is said to have high level of 'bio-
availability', which means the absorption of nutrition from the food. Most of the time,
our body doesn't fully absorb the nutrition from the food we consume. Pepper helps to
absorb nutrition from the food. Also, the ingredients in pepper increase the gut motility as
well as the digestion power by increasing gastro-intestinal enzyme secretions.

Here's a wonderful prawns recipe using pepper, which is very similar to the ones
served in
'restaurants'. Yet we can be reassured it’s healthy too. Using moderate amount of butter is
actually healthy for kids.

Ingredients:
Prawns - 500g (or) 1/2 kg
Garlic paste - 1 tbsp.
Freshly ground Pepper - 1 tbsp.
Butter - 30g
Turmeric powder - 1/2 tsp.
Red Chilli powder - 1/2 tsp.
Fresh Coriander Leaves - a small bunch
Lime juice - 1 tsp.

To clean:
Shell, devein and wash prawns. Add 1/2 tsp. turmeric powder and 2 tsp. lime juice and set
aside for 10 minutes. Wash and drain; now it's ready to cook.

Method:
In a pan toss in the butter, add garlic paste and sauté for few minutes. Add turmeric powder,
Chilli powder and pepper powder. After two minutes add finely chopped fresh coriander
leaves, sauté for 2 more minutes. Stir in the prawns, add enough salt and mix well. Cook for
5 minutes, switch off. Pour the lime juice and mix well.
Serve hot with Rice.
